Yellow Skillet Corn Bread 

 
 

3 tablespoons of Butter       
or 3 tablespoons oil
2 cups enrich
self rising cornmeal
1 1/2    cups milk
  1        egg
 
 

             Heat oven at 375 degrees, put corn meal in bowl, melt butter, pour butter, eggs, milk,
into corn meal,  heat 2 tablespoons butter in 9 inch case iron skillet on top of stove, when hot,
pour in corn meal mixture. Bake 35 to 40 minutes
 
 
 

Corn Pudding 


8  ears corn
      or 16ozs. of frozen corn
  1  cup sugar
1/4   cup of milk
    2   eggs
2    tablespoons flour
   1    teaspoon vanilla
1/2      teaspoon lemon
 

           Heat oven to 350. Shuck corn, wash and remove silk. Cut corn off cob. Mix sugar and flour in bowl, pour sugar and flour on corn, mix eggs, milk, and vanilla, lemon. Pour over corn, bake about 45 to 55  minutes.
